It's likely your problem isn't either of the browsers. What antivirus app are you using? Last signature update and full scan?
I use Norton Antivirus and Windows Defender. I also had AdAware, but my friend's husband that looked at it, said I had to many anti-virus programs. He also said that it was getting old (2003). Norton and Windows Defender run automatic scans all the time, and I do manual full scans once per week.
As far as I know, manually uninstalling it should do it. Go to Start, then select Control Panel, then open "Add or Remove Programs" and find IE8 in that list and delete it.

If I take out IE8, and reinstall IE7, it means that I have to also reinstall every program that I installed while IE8 was in my computer. I think I'm going to leave the problem to the professionals to take care of.

No it does not, you may get a warning saying so, but it's not likely you'll have problems.
I keep getting error messages when using IE8 or Firefox. They say: IE Explorer (or Firefox) has encountered an error and needs to close. This is extremely aggravating, and I don't remember getting it while using IE7.
I get it too. It throws up that silly "sorry pal" message, and it's usually a mshtml.dll something or another doing it. If you are working on something, tough cookies. It kicks the page off. I think they lie. They do not have to close. They just like to aggrivate you. Go back to the same page, and get no error message. I never understood that part.
I have had a problem with Firefox crashing lately, but only when I get onto hotmail. It doesn't happen with IE. I just upgraded from Vista to 7 but it's doing it with 7 too. I have another computer w/Vista and it doesn't happen at all.
I have been running IE8 for many months now. Very rarely it will have a problem - but most times it is a web page that was designed in a way incompatible with IE8. Using the compatibility view usually fixes it. IE8 also recovers very well - usually by restoring all the tabs that were active.
IE8 works very well with Windows 7 - the Win 7 taskbar peek feature shows all open tabs of each and every IE8 browser. Very handy. It only shows the first tab of a Firefox or Chrome browser.
