Since I ate at Chop'd in London (
chop'd - London's finest salads, soups, stews, wraps & meze's ) recently, I've been looking for a similar place (i.e. kind of like Chipotle but instead of building a burrito you're building a salad) in Las Vegas, without much success. There are a few US chains that do the same thing, like
Chop't Creative Salad Company and
Garden Fresh Salads, Gourmet Wraps and Artisanal Sandwiches | Tossed (yeah, not much variety in name for these places haha), but they aren't in Vegas. Has anyone seen a restaurant like this in Las Vegas or is this a wild goose chase?

Not a salad bar, but I really like the way they chop the salads up into small, but equal, bites at Grape Street Café.
Introduction
Of course all the boofays have salad bars, but you have to pay the same price as for real food. I like the salad bar at Ruby Tuesday's, but it's very limited. Since I don't eat much rabbit food it has everything I want on a salad.

There was one at 215/Decatur called Salad Creations. Kind of like a Subway for salads, wasn't bad but closed soon after I got some salads from them.
