Best fried chicken I've had in Las Vegas at a sit-down restaurant was M&M Soul Food Cafe. You can get fried chicken at Michael Mina's steakhouses (Stripsteak at Mandalay Bay has it on the menu), but it's $29 per person. I've never ordered it, I eat at his restaurants infrequently enough that I always order my favorite, a bone-in ribeye.
I need to try the Soul Food Cafe. I have heard great comments from many about it. I always thought that a Roscoes would do well in Vegas,

That's exactly the same for me. I lived in Dallas for nearly 3 years and never once went to a Chick-Fil-A because the name made me think they sold some sort of chick-pea paste - like humus or something. It never occurred to me that it was chick-en that they were selling.

I'll stop going to Chick Fil A when I visit other states only when someone in a fast food place in Vegas makes waffle fries that good I sometimes forget I am supposed to be there for the chicken.

RC Willey seems to be doing fine despite Sunday closings, maybe they can open up a few stores in their parking lots LOL. I doubt there is any real proof they have a ban on being here, just remember a lot of chains that do well everywhere else seem to die here when it comes to food. Only way Fridays seems to be hanging on is to take up residence in a casino, which seems like a clue as to why chain restaurants don't make it hint hint.

I think this was discussed in another thread somewhere but to set the record straight, no, that's an incorrect myth.

The founder is S. Truett Cathy, a Baptist from Georgia.

They could have put one in Boulder City, no gambling or partying there and Las Vegans would probably drive to it...

I wouldn't drive to Chick fil a if iti was across the street... I have had better chicken in a lot of places...

As for their religious concepts that don't bother me.. I just can't imagine a business that does not do business on a Sunday.. Which by the way is NOT the day of rest as everyone believes....

Although since the owner/chairman/ceo or whatever is Baptist that explains a myriad of things.....

As someone else mentioned, RC Willey seems to do fine being closed on Sundays

I wouldn't eat their chicken sandwiches if they were free and I was starving. I refuse to give patronage to a company that thrives on hatred.
