I was wondering this, because I used to remember stopping at Twelve Oaks Mall in Novi for their great cafeteria. It's still decent, but it seems to have gone a little downhill in the past ten years. My hometown Meridian Mall in Okemos, even though it's a much smaller mall, seems to have a really good cafeteria, probably the best I've been to.

Of the others I've been to:

Briarwood in Ann Arbor is non-existent
Lansing Mall is awful
Woodland Ball in Grand Rapids is okay
Amongst smaller malls, Birchwood in Port Huron and the Grand Traverse Mall were semi-decent

What are some of the mall cafeterias like in luxury malls such as Somerset? What about others around the state?

The food courts I like are the ones at Oakland Mall, Lakeside Mall, and Great Lakes Crossing. Somerset seems like it has limited number of choices compared to the size of the mall and compared to the amount of restaurants in the other malls.

Rivertown Crossings in Grandville/Grand Rapids is pretty decent, as far as mall food courts go, with a merry-go-round, two story atrium and a movie theater entrance. But I would say of all the places to eat, mall food courts are on bottom of the food chain.

I didn't know mall cafeterias could be ranked in terms of attractiveness. I have a hard time finding anything redeeming about an establishment that has me paying $10.00 for a meal that would cost $5.00 elsewhere.
