I lived there for 30 years...never heard Joisey.
I heard terlet (what you sit on in a bathroom).
Earl, as in Olive Earl.
When I would go get pizza I would just say "I'll take a slice".
Now, living in Ocean County, when I order a pizza and say to the girl on the phone "I'll have a pie", she says "you want a pizza pie"? I never in all of my life ever used the term "pizza pie".
When we went out to sit on the front porch we would sit on "the stoop".
I always called it Taylor Ham, although I was a baloney and eggs guy.

Everyone I knew said What Exit. Even my friend from Philly wanted to know what exit I lived at.
Today, a Fellow ex Jerseyan asked me how far I was from Exit 8 of the Tpke. That was the exit I picked up Rt 33 to Manalapan. Also 123 off Garden State and then Rt 9 South.

Maybe "What Exit" was a Baby Boomer Term that is Changing? All that said it were in the 50s age catagory, like me.

That Sounds more Like Brooklynese to me. My cousin from Brooklyn spoke that way.
Somehow, I think the people that refer to Jersey as "Joisey" are saying it in a derogatory way.

I don't even know what exit I live off of.. I almost never use the turnpike.

We call them hoagies here, noone says subs.
