I adore my cousins' daughters and don't really call them anything other than their names or "my cousin's daughter." I am fully aware of what they are technically called, but it seems so distant.
I think you should call them anything you want (well, excluding a few things) and be as close to them as you want. There is no need in comparing them to your future nieces and nephews who haven't even been born yet.
I am close to my two cousins who have children. I treat their kids like I treated my youngest first cousins when they were growing up, though I'm not as involved these days since I'm living far away.
Since they're cousins, I think of them as ... cousins. Imagine that.

Not everyone's family procreates on a schedule. I have first cousins that are my parents' age. My mom's oldest nephew is older than she is; his oldest child is older than I am. My mother's youngest niece is younger than my younger sister.
I also have first cousins that are in their 20s who are now starting their own families.

It really depends. You could be close or not. I dont' think I've met any of my cousins kids. I hope that it's not that way for my kids and their cousins though.
Nephews. In my family, we don't tend to use terms as "second/third/once removed" etc when describing cousins or nieces/nephews. We feel like those are all terms that just water down the concept of family.
We do tend to label according to generation however. So a cousins son will be considered a nephew.
