Another good way to fix eggs and zucchini is to chop zucchini, onions, and cabbage and let them simmer in some butter until they are nearly done, then pour beaten eggs all over it and cover it for a few minutes. Instant veggie frittata.

We are canning tomatoes today. The bell peppers were a total flop this year. They came out all small and warped. The zukes and squash have been pulled, but the melons are coming on strong. They like the intense Oklahoma summer!

If you don't want the peppers because they're warped, just drop them off here. I chop and freeze them.

having the same problems with the peppers this year. I wanted to make tons of pepper jam but it looks like one batch. I have planted 65 tomato plants just after the last freeze and have canned maybe 20 quarts. I have lots and lots of real green tomatoes. I water ever day right now with the heat (on a well) WILL THEY TURN RED. I haven't done any tomatoe juice this year. IS THIS AN UNUSAL hot year. I have lived in this State 10 years now and I have a hard time gardening.

I have 100 blueberry plants that do fine but I do not think produce the same amount per plant as when I lived in Northern ILL.

I just can't seem to get a handle on growing in OK.

One other thing, I never see to like peppers frozen. Of course this year they are so small and soft like but in the past when they were really big, I did a lot of stuff peppers and froze them. They were good.

I have planted a lot of winter squash and the plants are dying or dead, does that mean the squash is ready to eat?

I am too lazy and forgetful to water. I found if I leave my hose in the garden, it leaks a tiny trickle. So I just let it trickle!

I do go out from time to time and give the tomatoes a good watering, otherwise they split from uneven watering.

Our zucchini/squash kicked major buttocks this year. We are overloaded with them. But... they are just about history. I put too many plants on each hill because we had too many seeds and not enough hills. And I was not about to roto-till any more area.

And we usually dry the bell peppers out for use during the winter. Sorry, Kari, the bell peppers we have aren't fit for Washington/Alaskan bears, let alone humans. Even the skunks and tortoises won't eat em.

BTW, our atomic thermometer on the southwest porch reads 112.4 in the shade, and our northeast porch (the cool side) is reading 103.1~

So, Redbud did you plant winter squash and if so, are they ready to eat when the plants die. My plants are dying and I pulled several large orange hubbards. Didn't have to pull the plant was dead. Are they ready? Never planted winter squash before.

Strange garden variety you got there, the DEATH squorsh!

If the plant is dying, you best start frying. J/K. We started picking them long before ours started dying. They bloomed much earlier than the maters. I think you just planted too late. Its hit and miss in Oklahoma. Too early and a late freeze kills them, too late and the summer heat kills them.
