Well put, I'm always amused by people who claim that someone else has no business being offended by whatever they deem acceptable language. Cluelessness runs rampant in conservative circles...
It is the left who said "redskins" is bad, and then when asked (those who are called redskins) said they don't care....9 out of 10....See how easy that was....
Well, Ann Coulter just referred to Asian Americans as "mandarins" and stuck to it after being called out on it by her host. Now that's something just weird. I'm not particularly offended by it but that's specifically used to refer to the civil service class of the Chinese dynasty over 100 years ago, rather than a whole class of people. Chalk it up to Coulter being Coulter.

Well the mainland Chinese have adopted the mandarin dialect of Chinese as the official language of their country... so I don't see anything wrong with referring to Chinese as "Mandarins". Shrug.

Agreed tho to be fair: it's kinda like referring to some people as "colored people" which ain't good in 2016 but, "people of color" is Ok. Yeah, I don't get it either.

Well, it's not something to get all excited about, just kind of silly, and just really out of context, and the sign of an ignorant person.
Just to correct the sematic usage and context, It's not equivalent to referring to some Chinese as Cantonese or Hunanese (and the dialect they speak), because Mandarin doesn't have any provincial origins. Do you call Indians "Hindis" for the lingua franca they speak?
You can just chalk it up to Coulter being Coulter.
