Elections are the same day every four years. How hard is it to plan your voting time that works for you? Why do you need more time? Is 4 years not enough? This applies to voting in person or by mail.

There was a problem with people getting their ballots in a timely manner, to mail back in.

This gives time to count votes postmarked by election day. There's no reason to have a problem with that, other than wanting to throw out legitimatize votes.
