I'm in Texas which is a at will state. You can be fired for any reason at anytime. My guess is most of the larger employers are going to require vaccination in order to avoid lawsuits. It's as simple as either you take it or get fired. Your options as a employee are pretty limited.

Every state is an "at will" state.
There are limits on firing for any reason, such as discrimination. There is a myriad of laws regarding employer mandated vaccinations. This pandemic though is going to be a new area in such legal battles.
My company mandates a yearly flu shot. You could opt out, but you would slide to a less generous health insurance plan. The deductible and copay is higher. They could possibly do the same with COVID.
