I know two out of the three fairly well, but they are chalk and cheese, you'd need to visit and see which suits your families personalities or tell us what kind of school set up and environment you actually like to give us more to go on.
The schools are all excellent in Chapel Hill. It's a smallish town so the schools aren't very different in terms of academic achievement.
Estes Hills starts French in Kindergarten; teh other 2 start Spanish in K. Estes has more families from other nations than any other CH elementary. Glenwood (not on your list but still) has more Chinese kids than any other. Also has a dual-language Mandarin-English program. Carrboro has more Latinos than any other. Also has dual language Spanish-English program. I believe Rashkis and Ephesus will also be starting dual language (Spanish-English) this coming year.
Rashkis is in Meadowmont so it's a neighborhood school if you live in there; if you don't, but are districted to that school you may feel like an outsider. Estes and Seawell aren't in those types of brand new community areas so the lines are not like that--you won't feel like an outsider no matter how you end up at Estes/Seawell. Estes is a very old school (2nd oldest in CH) so it doesn't have climbing walls or anything to really make it look pretty. It has great parent support though, and wonderful teachers. Glenwood (old) has a playground where you can hear the traffic rushing by. Bothers some parents, not others (probably the kids don't' even notice!). Old does not mean worse necessarily though! Rashkis and Seawell are newer (and whiter I might add). Yes, they try to make sure there are kids of all races/ethnicities in the schools, but it does not come out evenly.
There are lots of other differences too. Bottom line is that they are all great schools, and I would not single out any of them as being "better." They have some differences which may or may not be important to you, so that might help you decide.
