Whats the deal with homes that go from sold to off market on search sites? Does that mean the deal fell through and its not relisted yet?
I think it is that homes are sold, and then after being sold, are no longer considered as part of the market -- often a seller can ask (I think) for the home to not be listed as sold, something in the MLS aggregates this, or, as with my house, after some time it move from sold to off-market.

It means it’s no longer for sale. It’s sold.
If it was listed then just off market no sold notation between the listed and off market it means the owner decided to pull the listing and not sell it. Which means it’s off the market
I’ve been getting in the habit of looking at “pending” sales. I google “Redfin pending” and the link let’s me search for contingent and pending houses in my area. I then save the ones I really like... I figure if everything falls through in 2 months then the house sits back on the market for another 2 months you have a great prospect for a low ball offer going into the fall.
Perhaps property showings are temporarily suspended?
We have two MLS statuses that don't go to the scam sites:
"Coming Soon"
"Withdrawn-No Showings." I am guessing you are experiencing the latter.
A "Withdrawn-No Showings" is often one that owners want to sell, but may be bumped from Active status to allow repairs, to accommodate family needs like parties, weddings, funerals, etc, or may just be on hold due to COVID-19 concerns.
A great many come back to Active.

In my area, zillow showed my house off-market as soon as I accepted the offer.
It then went to "pending" on realtor and then "sold" the day after it sold. My house never had "contingent" status even though other houses in my area did. Then again, my buyer only asked for very minor repairs that took me a few days to get fixed?
I did take the house off the market last fall, when I didn't receive an offer (I did have showings, though). In that case, both zillow and realtor showed the house as "off market".
Z/T showed “off market” on one of our active listings. Seller was upset. I went back into our mls and changed the syndication date to that day. And I 16 minutes it was showing for sale again.
I have zero control on what Z does on their site. R.com showed it as Active.
I looked into one particular case just like what the OP describes, and it turned out that the house had indeed sold--months before.
