I got a lot of really great, sensible ideas out of Adele Davis cookbooks, which I still remember and apply regularly. Like mashed potatoes cooked right in the milk, undrained.
The Essential Vegetarian Cookbook, 1997; The New Good Housekeeping Cookbook (all the old ones updated and new recipes too), 2001.
Online recipe sites have healthy cooking sections....I use Allrecipes.com
as they offer info and recipes from around the world. Fun site. There are blogs as well but I never read them.

I think there is a need for healthy cooking, that is only lean meats, no cream, fatty cheeses, or whole milk, salt optional and sugar free meals. Cooking that is not high in bad (processed) carbs and concentrates a lot on vegetables and broiling.
Are there any cook books that are GOOD that concentrate on healthy eating? I wish some of these cooking shows would think of food as nutrition/body fuel rather than all the fattening junk. It is as though you are just making a yummier junk food than the big Mac when you follow some recipes, no? Heart attacks are the number one killer in this country, are they not?

Yes, I love that too !!!! I've made her falafel (yum) many times as well as other recipes in the book.
Another favorite is my old culinary school textbook "On Cooking". It's massive with pretty much everything you ever need to know about cooking, even dishes from other cultures. It also comes with step by step pictorials. It's awesome.
Yes, I've tried them and still use a lot of them. I consider most of them acceptable - but there's always a few that have ingredients that I can't stand or are too high-carb for me
