I'm thinking of marinading and baking the breasts, and either slicing them and topping a mixed green salad with them, or eating them side by side with salad or veggies.

Some soy, a little ginger, a drizzle of honey.....the possibilities are endless!

Garlic, soy, sesame oil, brown sugar. Other possible additions: orange juice/zest/marmalade, green onions, cilantro, 5-spice powder, Chinese mustard. Mix and match.
Thanks! Update - I found an unused pre-prepared Teriyaki burger seasoning packet that I forgot I had...it has garlic, ginger, onion, and brown sugar in it, among other things. I dissolved that in some olive oil, and added some soy sauce and sriracha, and the chicken is chillin' in it now.
I think I'm gonna roll 'em in a little cornmeal, first, just for a change of pace. I'm also making brown rice seasoned with a little garlic sesame oil.

I like a simple chicken parmesan - pound your chicken breasts to about 1/4 inch, coat in seasoned flour and then dip in beaten egg and then in seasoned bread crumbs mixed with fresh parmesan (add some finely diced basil and a little rosemary and/or oregano if you want), saute in a little olive oil till lightly browned (they cook quickly) and finish with a squeeze of fresh lemon.
