1 (10 ounce) package fresh spinach leaves
1/2 cup sour cream
1/2 cup shredded pepper jack cheese
4 cloves garlic, minced
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1 pinch ground black pepper
8 slices bacon
Preheat the oven to 375 degrees F .
Place spinach in a large glass bowl and heat in the microwave for approx. 3 minutes or until wilted, stirring every minute or so. Stir in sour cream, pepper jack cheese, and garlic.
Lay the chicken breasts out and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks and arrange in a shallow baking dish.
Bake uncovered for 35 minutes, then increase heat to 500 degrees F or use the oven's broiler, to cook for an additional 5 to 10 minutes to brown the bacon.

thanks, sounds good. I usually use some bread crumbs but I like your recipe better. I bet it would be good with pork chops as well. Oh, I have never tried adding the bacon, that is a new one.

I should have mentioned that I use a metal pan to cook them. It helps cook the bacon on the underside of the roll-ups.
Pork chops may be a little harder to roll, since they're usually shorter, but I bet it would taste great too.
The bacon fat drips onto the meat while cooking, giving it a really nice flavor.
