I am STILL puzzled about what happened to my blue cheese dressing. Someone thought it was the Lite Miracle Whip, but I make dill dip with that and full fat sour cream all the time, and that doesn't separate. I'm still clueless on why it separated. But this Thousand Island is sooooooo good I'll be making it over again!
I still don't get why you would use lite mayo (or Miracle Whip), and full fat sour cream. It makes no sense. I wouldn't use Miracle Whip, but I have found (after exasperating research) that my lite mayo did cause liquid to form in some things. Now, when I make chicken or tuna salad, I use the full fat mayo. I figure I'm not getting much fat in one serving. I couldn't tell you my recipe, but I've had great success with blue cheese dressing. I kind of throw things together and hope it works. Sure there will be failures. We have a favorite family recipe for basic dressing. I sometimes take some of that and add other things to it to make other kinds of dressings. For creamier, I've used) %0 fat Greet yogurt in some dressings. I even use a reduced fat blue cheese. I wouldn't use it if it wasn't delicious. If I couldn't use it, I wouldn't make the dressing. But when you make your own dressings, sure, once in a while there will be failures. I never, never, ever buy any kind of bottled dressings. I only make my own. I've found many recipes for healthier versions, and have created some of my own.

Glad the Thousand Island came out great. Have fun trying new recipes for dressing!

I think too many people have their favorites and just do not realize there is a difference in texture and flavor from one brand or type to another. I happen to agree with you: There are some things Miracle whip work well for, others really do better with mayo and lite anything isn't going to produce the same texture as full bodies. It is a good substitute, maybe healthier except for the sugar level, but people do have to realize there will be a difference.
