I use onions, bell peppers, canned tomatoes, ground ancho chili, cumin, either ground turkey or cut up cubes of beef chuck. I've never used sweetener in chili. Never heard of it, actually, though a friend of mine puts a spoonful of cocoa powder (no sugar) in his chili. Just don't use beans.
I too am on a Low carb. I am a diabetic. I love beans but they are high in carbs. The types of beans differs slightly but using pinto beans as an example, 1 cup of cooked beans contains 45 grams of carbs.
I use Eden Black soybeans in any dish that calls for beans.
Carbs are much much lower. One cup is 16 grams with 14 grams fiber.

I find mine at Walmart, Amazon, health food stores, etc etc etc. Depends on who is cheaper at shopping time.

Honestly, since the only time I use them is in spicy - they take on the taste of the surrounding food (chili, salsa, etc) The "mouth feel" is right for me also - not slimy or mushy.
OK, I need a low-carb chili recipe with no beans, sugar, honey, agave, artificial sweeteners, etc. I was thinking about making something with ground beef and vegetables, but unsure. Have any favorites you'd like to share?
It is simple, just use your favorite recipe and leave out the beans. As for sweetners, artificial or otherwise, who would put that in chili period?
Diced green peppers sauteed with the meat will give it the bulk you need and sweeten it a bit with a good depth. Many people add a spoon or two of sugar to chili if they use canned tomatoes, it takes the bitter tin taste out of it. I use a 1/2 spoon of xylitol.
I like to cook with maple syrup.. but if you want low carbs with high density nutrition.. molasses works quite well (blackstrap).
I love using leftover spagetti meatsauce for the base of my chili.
If you're using ground beef, add lentils, molasses, vinegar, salt (add only at the end), paprika, soy sauce (dash of 1 tsp), chicken stock, San Marzano tomatoes, onion+garlic powder, red bell peppers + onions (caramelized & grounded); tomato paste, and bay leaf (a few)...corn starch as a thickening agent and sour cream + mozzarella + finely julienne green onions.
