I have some beef bottom round roast thinly sliced into carne asada meat. However, I'm eating low carb for a while and don't want to eat tortillas. How would you use this meat?

I'd use it as the protein portion of a big salad. You decide what you want in it, then dress it in evoo and either lemon juice or vinegar (not sure about the carbitude of said components).

Lately I've been having green beans, spinach, red peppers (raw or roasted), walnuts, and cheese in salads, in addition to greens.

I know what you mean by "carne asada meat" but all that really means is "grilled meat". I am a low carb eater myself and have come up with some pretty inventive ways of preparing meals. A round roast is a lean cut of meat and is more for stewing or as a pot roast. In any case, instead of the tortilla you could use lettuce or cabbage and make wraps. Cook the meat in a bit of oil, remove from pan, cook your veggies and add meat back, add some sauce such as Worcestershire or Soy sauce in and there you have it.
