Husband requested a tater tot casserole, but he doesn`t want the hamburger in it.
Any good recipes out there that I can try?

I don't use potato tots but I believe you could substitute them in my casserole. Here it is. First, I slice some potato into thin slices, then add to a hot skillet with melted butter. Fry until thoroughly cooked and beginning to turn crispy, adding additional butter as necessary. Then, layer the potatoes at the bottom of a casserole, cover with corned beef, and last, a layer of Swiss cheese. If you have a large casserole you can have two or more layers of each. Add a small amount of milk or cream. You may add more later if necessary.

Bake at 350 for about 40 minutes. Remove from the oven and let stand while you fry or poach some eggs. Either place the eggs on top of the casserole or on top of individual servings. Warmed sour cream with chives is a good addition to the top of the casserole either before or after adding the eggs.

This isn't really a recipe but rather a guide. You can substitute cheeses or meats. Pastrami and Muenster is quite good. If I were using potato tots I'd use plenty of butter and sour cream. Addding some Parmesan on top before baking is good.

He just doesn't want specifically hamburger in it, or he doesn't want any meat?

My recipe is easy enough to do subbing in chopped beef stewmeat or pot roast chunks for ground beef.

He said that he had some at work that was really good, and he didn`t think it had any meat in it.
All the ones I looked up, has hamburger.

Here's a vegetarian casserole that uses no meat.

Here's another. The vegetables make it look more like a pot pie though.
