I buy my casings at my local supermarket which is HEB. They usually have them in stock around hunting season. If they don't have them they will special order them for me. I get them for around $5, they are almost $10 on Amazon. Here they are

Haha! Yeah we enjoy making it (at least I do). My neighbor who's in his late 60's lives alone and suffered a stroke last year gets some, our friends get some.. Sometimes we'll have 6-8 people over hanging out and helping when we make big batches. My neighbor (with the stroke) is kinda a crotchety old cowboy- literally he cowboy'd for a ranch for 20 years- he brought his bull elk over and I butchered it and we had over 100 lbs of grind just in that.. We'll be making bologna/salami with that in January.

That’s what I’m talking about.

There is a guy on the hunting forum I visit that uses a ply wood smoke shack that got me interested in this.

So I have to ask...can seafood be made into sausage ?

I have easy access to that.
Clams, oysters, crab and fish are easy for me to harvest.

Venison, duck and other game might take a bit.
So currently I only have access to store bought meat or seafood during this holiday season.
I plan on tinking with this this holiday season.
