I'm with you on this one, ketchup in anything I pretty much pass. I'm not big on sweet foods either and I do not want sweet egg salad or deviled eggs. I must have boring taste buds but I'm not big on hot spicy either so no tobasco for me.

I don't even like to use red onion much and definitely not in any sort of salad, it is too sweet for my taste. Basic old fashioned the way my Mother made it potato salad, egg salad and deviled eggs.

Default PERFECT Egg Salad

If you are looking for a sandwhich, salad on lettuce or to serve with crackers, can't beat this egg salad!

We love egg salad. It is so easy to make and so good for sandwiches or to serve on a bed of lettuce with crackers. We love it at my house for a quick sandwich anytime hunger strikes.

6 eggs, boiled, peeled and coarsely chopped

1/2 cup mayonnaise

2 tablespoons finely chopped onion

2 tablespoons finely chopped celery

1/8 teaspoon pepper

1/4 teaspoon salt

1/4 teaspoon paprika

1 teaspoon yellow mustard

1 teaspoon Dijon mustard

In a bowl, combine all ingredients and mix well. Serve over lettuce leaves or on your favorite sandwich bread. Makes about 4 sandwiches. Enjoy!

I use eggs and mayonnaise, not miracle whip.
I have no need for all the other stuff and mine tastes exactly like I want it to.

I make mine taste like deviled eggs. I use mayo, Dijon mustard, paprika, and add a little bit of onion powder.

Minus onion powder, we do the same thing. Pinch of salt/pepper too.

I've never used paprika or mustard, but I'll try it next time. I love egg salad.

We make different kind of egg salads...

5 hard boiled eggs
2 onions
1 cup sour cream
1 Tbsp Dijon mustard
pinch curry powder
pinch paprika
pinch black pepper
salt to taste
2 Tbsp basil

another one is ....

4 hard-boiled eggs
2 dill pickles
1 apple
1 tomato
1 onion
7 oz corn
1/4 cup mayonnaise
3 oz plain yogurt
chives/pepper/salt to taste

or the one my kids like...

4 hard boiled eggs
1/4 cup mayonnaise
3 oz yogurt/sour creme
1 onion or chive or spring onions
capers/dill pickle/celery
Dijon or French mustard
salt/black pepper/chili powder

Every egg salad sandwich on a bread/bun with lettuce..yum

Egg salad is a staple at our house. But, I use Miracle Whip (apologies to those that don't eat it). If I only have regular mayo in the house, then I add the missing sugar to taste.

The recipe we prefer is simply hard cooked eggs chopped, MW, yellow mustard, onion chopped, sweet pickle relish, salt and pepper to taste.

The celery option sounds interesting and I plan to try adding that to my next recipe.
