No such thing as perfect. Even the most desirable celebrities are not perfect:
Brad Pitt- under 6 feet tall
Ricky Martin- under 6 feet tall(and gay)
George Clooney- under 6 feet tall
Angelina Jolie- donkey lips
Natalie Portman- not that curvy
Jennifer Aniston- not that curvy
No one is perfect. No amount of makeup and airbrushing is going to change that.
On a lighter note, go watch the movie "Horrible Bosses" then come back and tell me Jennifer Aniston doesn't have any curves. That's one woman who gets hotter with age, and that darker hair color didn't hurt any either. Whew!
I agree with Justthe6ofus, most men are looking for someone who is perfect for them, which has nothing to do with perfection as a person, for which there is no such thing.
I feel as though men have been conditioned to believe that women are perfect and have no flaws. From mens' magazines with airbrushed flawless figures to music videos and supermodels.
I regularly visit blogs where individuals comment on minor flaws on women or in tabloids where celebrities are ridiculed for having a flabby stomach, untoned thighs or a scar.
This just simply isn't realistic to me. AND sometimes women chime in and comment as well. They also feel as though they aren't up to par to these airbrushed, oversexualized images portrayed in the media.
I do agree that women should be healthy, exercise regularly and have enough esteem to take care of themselves.
So, after all I have said, do men really want to date perfect women? Do you wish more women were like Kim Kardashian, Eva Longoria, Halle Berry? If so, why?

Men like to fantasize about stuff. The models/porn stars/actresses are fantasies and nothing more. Most men realize only a few lucky guys got a chance of ever getting with a women that exudes near perfect beauty[though they may not have perfect personalities]. For the majority of us, we accept flaws and expect flaws.
This is why I feel like "pursuit of perfection" as pushed by the beauty industry is pretty silly. Unless you are seriously hideous, there's a guy out there that is going to like ya. Not to say I don't like gals w/o makeup or not trying to look pretty, but I don't like girls that are obsessed with trying to be perfect in the looks. That does bother me.
So in answer to your question about the popular women, the famous women are nice to look at, but personally, I'd rather my girl have some flaws and actually be in realistic reach.

Yeah, there is no one "perfect" woman, me for example, what I like isn't the typical or spoon fed crap that the media says is what the "ideal" is.

What even you apparently fail to understand is that the women above themselves look nothing like the images that are supposed to be "them" on the mag covers! Random women from the street can look even better than them after going through the whole beautifying and photochopping process.

Now why would men want to date these perfect women? What such a headache. I mean, who in their right minds would, seriously?
Every girl I date is perfect to me until they prove me wrong. I'm sure it goes the same way with both sexes. At first, you want to believe that this new person you are dating is exactly what you want. You even convince yourself that dating a tattoo artist or professional skydiver is exactly what you need in your life. And then it hits you and you get dragged down to reality.
I don't think anyone has issues finding people to date. The issue is finding people that they want to continue dating. That one person where your subconsciously sugarcoated reality is inline with the truth.
I think the best thing to do is keep moving on. It's easier to realize the right one after you've moved past it. No one said you can't turn around.
It beats the alternative of settling for the one in front of you.
Perfection is a figment of everyone's imagination.
