Sea, heavy is good but don't forget to flour the rolling pin as well. A lot of them say you don't have to flour the rolling pin but you do and it is just a fact of using a rolling pin. When you roll it out you want to roll it a wee bit thinner then the end result noodle that you want because the noodles will puff (hopefully you know what I mean) when they cook.
When I test for done or not done, I take the largest noodle that is floating and cut it in 1/2 then cut a small piece off of one of the 1/2's, that will give you the best indication of the need to cook for a few minutes longer or not.
