Keep a 30 gallon garbage bag going and if it's usable stuff fill it as you see stuff that needs to go and get to goodwill or one of those agencies. Keep at it.

HELP!! lol that's my word. I need some serious help, I've got over 25 years of junk I'm trying to get rid off.
It's overwhelming unless you break it up into smaller tasks.
I took a room at a time and emptied it. Then I put back just what I wanted for a
quick sense of accomplishment.
Then I sorted the rest into
1) keep but belongs somewhere else
2) trash
3) charity
It can be overwhelming for sure, but keep at it, even one tosses into the bags 1 or 2 things a day. There is also to keep a bag going on throwaways.
I'm sure you folks with large houses it's really overwhelming. I've lived small all my life as I never remarried and it's only me for the last decades..

Tho I drive a 40 yr old car (that gets 50mpg on FREE fuel...), 40 yo motorcycle, bulldozer, tractor, road bicycle, ... It would be much simpler to have only ONE of EACH! Many of our appliances are 40+ yrs old (Waffle Iron is 106 yrs old, and still makes a large rectangle FS waffle in 18 seconds!)
Ice cream maker is 60 yrs old (and we still use it every week in summer)
Bosch Kitchen machine has been used daily for 40 + yrs AFTER we bought it Used (worn-out) from a commercial baker.
As a farmer (in 2 locations), I have a LOT of STUFF... someone will have a GREAT estate sale! (or 2). The plan is for the 'survivor' to head off to the Christmas Markets and spend the booty on gifts for others + a very nice trip (hopefully for a few yrs).
Option 2 is to give all useful items to a kid's rural camp (we have 20+ retreat camps within 20 miles)
Option 3 is to build a staff cabin on a camp and bring and LEAVE everything (including ourselves) as volunteers "off season" and GONE during season so the staff can use our home.
We have always shared our home with people who needed a place, my parents did it, and grandparents too.

Most people talk about doing it but won't. They have a bag for Goodwill, don't live anywhere near a Goodwill. and the bag just sits there.
They think if it belonged to their parents or if it's old you have to keep it. They forget that Mom and Dad shopped at Woolworths or similar stores and those things aren't really worth anything. How many bring back great memories? Probably an amount that will fit in a shoe box.
Books. I had over 150 shelf feet of books. No novels. They are gone. Seinfeld had a routine about people and books. Do you want people to see how much you have read so they think you are smart?
Look at what your children and grandchildren have and do. Do you actually think they want any of your stuff? They don't remember Great Aunt Mary and they don't want her quilt, Hummels, or dishes.
The word I use to simplify my life is "no". Just say no to buying excess crap, going places you don't want to go, doing things you don't want to do, etc.
As for describing the "decrapifying" process, I'll stick with the words "simplify" and "declutter".
