All these are a personal experience.
I recall the interstate that runs through Nebraska being boring as heck. Also, driving on the interstate that runs through west Texas isn't exactly my idea of a good time.
My experience was I-84 in NY and PA. In CT and MA, there are cities with rest stops every exit. In NY and PA, there is 1 exit every 5 miles with almost nothing. However, there is a great view.

I drove from Abilene to El Paso at Christmas. Sort of enjoyed the drive as the speed limit was 80 most of the way (I went 85) and there were lots of trains.

That's I-80. Many people forget just how far it is from a place in west Nebraska like Sidney to Omaha in the eastern part of the state. Its between 400 and 500 miles. Nebraska is very flat. However, some of the scenery on the way isn't bad. The road follows the Platte River at times. There is a museum in North Platte that is worth getting off the interstate and visiting. I-80 through much of Wyoming and Nevada is far less scenic.

The funny thing about Nebraska is that I-80 will give you a completely false perception of the state. There's some really beautiful country north of I-80. The Wildcat Hills near Scottsbluff, Sand Hills near Valentine, and Pine Ridge near Chadron look nothing like the scenery on I-80.
I said alligator alley a long time ago, but I think i55 is really bad driving through illinois.. especially with those police officers.
