Your memory is faulty. Theon's father and sister are being played by the same actors. The brother of Balon who was introduced is a new character entirely (at least for the show). He may have been mentioned in a past season but not seen.

Can someone please remind me of the Dorne sister (name starts with an E) who was killed by the Mountain years ago? Was she wife of the Mad King? I need a little refresher on that character.

Elaria, she was wife to Rhaegar, who was the Mad King's son, and a good man. He is also Jon's dad, via Lyanna, Ned Stark's sister as well.

And Lyanna is the reason Robert killed Rhaegar? Because they ran off together--or he kidnapped her, depending on who's telling the story?

A good man cheating on his wife?

LOL, there is something quite Hobbitish about him. I think the ears....

And Max von Sydow is a great addition. Between he and Jonathan Pryce, they have some really fantastic and well known veteran actors on the show now.

Robert claimed she was kidnapped and raped. Ned never confirmed that. In the book, at least, it is STRONGLY hinted otherwise. But I don't know that it was ever quite so strongly hinted on the TV show.

"Good" is a relative term in this story. Look at Tyrion. He whores and drinks and lies and murders. But he is still one of the good guys. Then you've got someone like Stannis, who is incapable of breaking the rules, who is a thoroughly evil dude.

A lot of this is back story mentioned in the main books but fleshed out in this:

Rhaegar also believed himself to be "The Prince Who Was Promised" to lead the fight against The Others (White Walkers). Something made himself change his mind.

And Jaime who started out as a villain but is now, if not a good guy, at least sympathetic.

Correct. And yes Rhaegar was still a good man. Desribed as the best of men, as the picture of chivalry. But there is no black and white in GRRMs writting, that is what is so amazing (well Roose and Walder Frey come close, lol). But seeing the world in black and white is a very childish way of looking at things, and GRRM rights a realistic fantasy, a world of shades of grey. Even the purest of the main characters, men like Jon Snow and Eddard are faulty men of bad choices.

I see patterns developing: Two prominent to me are all the original older rulers are dead (murdered) and the women are taking over the plot (nothing wrong with that. Just an observation......).

It was Elia Martell that was killed by The Mountain.

Ellaria Sand is Oberyn's main paramour/lover and is the one that kissed Myrcella last season.
