I'm vegetarian, not vegan.... so these hash browns will probably be paired with scrambled eggs.

Any sauteed veggies would be great on the hashbrowns OR Make some cashew cheese and drizzle on top OR fried tofu marinated in veggie broth and nutritional yeast on top of hashbrowns.

Diced onions go good in hash browns to give them an added flavor note... if you want to be a little fancy, you can use scallions instead - that's a classic in potato pancakes. I've never made hash browns but I know you cook the potatoes a lot to brown them, and so I suggest adding the onions or scallions midway through the potato cooking - they won't stand up to the heat as well as the potatoes. Mushrooms seem like another thing that would go well, and again I'd add the mushrooms later, as they too will cook faster than the potatoes.

The secret for crispy hash browns is to shred the potatoes, then roll them in a kitchen towel and twist to get rid of as much moisture as possible.

If you add wet ingredients like veggies or mushrooms, cook them separately to get rid of moisture before adding to the spuds.

I keep it simple. Maybe a bit of pepper, but definitely hot sauce - take your pick. Tabasco, Cholula, Valentina, etc.
