i may have already posted this cause i eat it all the time, but i had:

yellow rice
black beans
quick pickled onions
sauteed spinach

the onions were red onions so it made for a very pretty plate color-wise this time around.

It got down below freezing & started snowing lightly today, so I just cooked up a vegetable barley soup for dinner tonight.

You're making me hungry for "winter".

It's been crazy-hot and dry here in the midwest this summer. The tomatoes and basil are kind of past their peak. Starting to see squash and apples in the farm stands.

Since I'm still kitchen-less I'm eating whole-wheat wraps (square tortillas lol) with pre-made baba ganoush (see my post in food reviews) with baby lettuces. And drinking a glass of "housewife wine" (Chardonnay).

Thinking of making a lentil and cashew *something* for my DD and her BF - would a lasagne work... I wonder?

Or any other suggestions using those 2 ingredients as the protein?

"Chicken" tetrazzini over jasmin rice. I finally got to go to my local Seventh Day Adventist book and food store in the next state, and restocked my pantry with all the TVP varieties that I've been out of for several months. Looking forward to some hearty chili this weekend
