I'll probably make me some thai chickpea curry, coconut rice and I bought some veggie spring rolls and it will be mine, all mine because I'm the only veg in the house, bahahahaha.

I threw a can of pintos and a can of corn in a pan with some spices(my premade taco seasoning has milk solids in it so I made my own), heated up some tortillas and cut up some lettuce and tomato and had tacos. I was afraid I'd really miss the cheese but surprisingly I didn't.

I made a barley stew with kale, carrots, tomatoes, garlic, and onions. It's been 10F so it's a good, hardy cold-weather stew.

tonight i will make a mean sheppards pie, I have made this for dinner parties and people didnt even know it was meatless.

Today - baked spaghetti layered with cheese, spinach and tomatoes

along with fresh spinach/kale cucumber/avocado salad and garlic bread

Homemade cream of mushroom soup:

Locally grown and/or organic leeks, shallots and ****ake/ portabello 'shrooms. A bit of sea salt, thyme and two bay leaves.

Sauteed in EVOO, butter and dry white wine. Topped with water and simmered for ~20min.

Pureed with a stick blender and finished with tamari and heavy cream (appologies to the vegans).

Served with a green salad and some local artisan bread.
