Yum---parsnips! I could see where you needed a green salad to break up all the white.
We are having leftover Thai "chicken" (fake chicken strips, of course). We bought fresh lime leaves and found a great recipe that uses them. Also making Thai brussel sprouts!

Tonight I needed to "clean out the fridge", so I opened the vegetable crisper and picked out the veggies that looked the most "tired".

I oven-roasted cauliflower and red, yellow and orange bell peppers.

I then tossed them with olive oil, lemon juice and capers. I added some roasted pine nuts for crunch and flavor.

This was excellent on it's own, but since I was cooking for my SO who looooves cheese I made an Alfredo sauce (sorry vegans ). I'm lucky because the little farm-stand/CSA/market down the street carries local/organic butter, ricotta and heavy cream. Tossed the sauce with fettuccine and topped it all with the veggie mixture.

It's cold and rainy here in the Midwest, so it really hit the spot.

I had a day full of meetings and needed a no-brainer dinner.

I'm making curried lentil soup (I use the Williams-Sonoma recipe I found online years ago) and baking focaccia .

Tonight is Asian root vegetable stew. Tofu, dried mushrooms, parsnips, turnips, carrots, daikon, seaweed, soy sauce, etc. That may not sound all that great, but it becomes much more than the sum of its parts. Deep and satisfying-----the veggie version of a beef stew! Has a lot of umami.

A Moroccan salad for tonight (from a cookbook).

It had rice, lettuce, oranges, onion, carrots, white wine and walnuts, and then salt, pepper, olive oil and vinegar.
