tonight was fairly simple. I made a cold macaroni pasta salad with canned chickpeas, peas, chopped onion, chopped fresh celery, vegan Just Mayo, and ground black pepper mixed in with macaroni noodles.

Tonight was store night after work, so I kept it simple and fast. I love Green Giant cauliflower sweet potato "rice" from the frozen vegetable section of the store. It's just cauliflower and chopped sweet potato. So I had that, heated, mixed with plain organic nonfat Greek yogurt, collard greens from my garden, a pinch of cider vinegar, and black pepper. I also had toasts with my homemade raspberry jam that I canned a few weeks ago on the side, and cashew milk.

Default buckwheat chili

I make it in big batches, and usually get ~5 dinners from a batch.

Steamed veggie on the side (broccoli this time).

Cleaning out the fridge before the next shopping trip:

A sort of farrow pilaf (spinach, edamame, peas, onions, corn, walnuts and a leftover mixed grain packet) cooked in mushroom water (left over from dried mushrooms), with seasonings, topped with a veggie patty and a side of sauteed zuchinni.

Made an avocado basil pesto dip to go with canned black beans (squirted with fresh lime juice), sliced tomato, and corn tortilla chips. This meal came together in less than ten minutes.
