I am having Easter dinner at our home and for the exception of 3 of us everyone else are Vegetarian's who also do not eat fish. I am at a loss as to what to prepare. Any sugestions would be appreciated, thank you. kelsie
If you are hoping to do a 'turkey' sort of dinner I highly recommend Quorn 'turkey breast' for the vegetarians. Super easy, super good. You could do that and some sort of meat for the three of you and the usual sides. Though I made the Quorn product for a meat-eater friend and he really liked it.
Otherwise you could do an Italian theme and make a lasagne or something with some sausage or something on the side for you.
Mexican theme with enchiladas or a taco bar (beans, fake taco meat, etc).
There are a lot of options! Though my daughter and i had the Quorn turkey and mashed potatoes and stuffing for both Thanksgiving and Christmas and we both loved it!
Since eggs are a symbol of Easter, I would probably make a quiche or a frittata.
If you are the cook and the hostess and you eat meat, you could also make two versions; one with meat and one w/o. As a vegetarian I only ask that the meat dishes be pointed out to me so that I can avoid them.
I'd probably start with asparagus soup or perhaps baked artichokes. Something that says "early Spring!"
I'd make a festive salad and have plenty of fresh (home made if possible) bread and rolls.
I'd make dessert something fruit-based (strawberries are the classic) and serve everything with a nice dry Cava.
I don't celebrate Easter myself, but I love to cook and plan parties. And I really really love to celebrate the changing of the seasons.
