What if Europe was, say, moved 20 degrees to the west? I'm not sure how this would work though, I guess there'd have to be an enormous sea to take up the old space.

No. 100-150 miles off the coast of NE USA is the Gulf Stream. Everything to the east is mild. Europe 20° to the west would still be bathed in warm water influenced weather.

Iberia would be like Scandinavia, but the Med would be hard to predict, especially since it's not clear if the Mediterranean becomes huge, and even if it were known, it's less predictable than a west coast clime shifting north.
