It's correct as it means "smooth and greasy." Garlic, oil, butter, and anchovies heated certainly creates a "smooth and greasy" concoction.

What gets me is the signs that are professionally done (by a sign making company) that have common words misspelled. I saw a sign for a fast food mexican restaurant the other day that read, "Tacos $1 on Wedensday"

The link does say that in the medical dictionary unctuous means rich in oil or fat.

EDIT: I see Dirt Grinder beat me to it. Gotta get up pretty early in the morning to beat Dirt Grinder...but, heck(!)...it IS 3:42 a.m.!

Unctuous is not a word well known so just be prepared if a friend has set you up with a blind date and told you she has a great personality and is very unctuous.

You might not have seen something of a similar nature that I posted many pages ago in this thread, so perhaps it bears repeating.
In a town near me, a carpet store has a huge professionally-made sign posted in the front window with the following message:

REMNIT SALE!

Even if the shop's proprietor doesn't know how to spell "remnant", wouldn't you think that the so-called "professional" sign-making company would question--and correct--the spelling provided by the carpet shop?

...and then we have the sign at a "dollar store" that tells us "Everything is a $1".
A one dollar?

REMNIT cracks me up.

Off the top of my head, here's two local businesses with professionally-done signs:
FASION WORLD. A huge sign painted across the top of the storefront.
And CONDONS ALINEMENTS. A front end/alignment shop. It's not far from me but the few times I've needed an alignment or front end work in the last decade or so, I chose another shop simply because I couldn't bring myself to patronise a business that can't be bothered to correctly spell the service it offers.

Oh, thought of another. BOB'S FAMILY DINNING. That's up in Harrisville MI where I used to spend a lot of time.
