Cold Hold (41 F/45F) "Repair the pizza prep cooler to hold food at 41F or lower to prevent illness. Observed internal temperature above 41F: ham 46.7F, chicken 45.5F, pasta 59.6F, cheese 49F and sausage 48.6F. Immediate prep foods were put on ice and the lower foods put into a working cooler. Approved Systems (HACCP Plans/Time as Public Health Control) Properly use time monitoring for pizzas on the prep racks that are made ahead and contain potentially hazardous food. Observed meats and cheese at 68 - 71F on the wall racks with no time monitoring according to the written wall sign. The manager stated the pizzas are held for 30 minutes but no time was observed to track any of the pizzas. (3 full racks)
Good Repair Throw out cracked and broken food containers observed in use to allow for proper cleaning and prevent product contamination. Also discard one pizza cutter observed with a chipped blade in use at the cut station.
