Observed undated and opened commercial packages of cheese and deli meats in the walk in cooler. The deli meats were discarded in the trash and the packages of cheese were date labeled-violation corrected on site. "

Observed no fpm on duty at time of the inspection and the fpm was off duty at time of the inspection. The director has scheduled a kitchen employee to take the learn2serve fpm course later in the week.
