Chorizo was fully cooked without a date on the date marking sticker. Manager Demonstration of Knowledge/Certified Manager Observed at the time of the inspection there was not a certified food manger on duty. Employee could not display or explain food safety procedures. At the end of the inspection the certified food manager came to the mobile unit. |
