Proper/Adequate Handwashing Food employees must remove gloves & wash their hands thoroughly immediately before engaging in food preparation to prevent cross-contamination after handling chemicals and santizing solutions. Observed that employee did not wash hands or change gloves before handling ready to eat foods after he cleaned cutting board and counter surfaces with his gloved hand.
Cross-contamination of Raw/cooked foods/Other "Food must be protected from cross-contamination resulting from various sources at all times. Directly observed food employee take rag out of chemical sanitizer bucket with gloved hand, wipe down cutting board and other surfaces, place rag back into sanitizer bucket and then handle ready to eat food (cooked pancake & walnut toppings) with that same gloved hand."
Toxic Items Properly Labeled/Stored/Used Provide chlorine sanitizing solution for mechanical warewashing at a concentration of 50-100 PPM. Observed 200+ PPM in use.
