Also, provide a thermometer in the walk in cooler to measure the air temperature and ensure safe cold holding of foods. A thermometer was placed inside the walk in cooler and violation corrected, and the owner will purchase a digital needle tip food probe thermometer later today."
Food Establishment Permit "Must obtain a health permit from Harris County Public Health & Environmental Services (HCPHES), and observed the business operating without a current health permit from the new owner issued by HCPHES. It was observed on the sales tax permit certificate that the new owner started the business on 5/1/14, and the new owner stated that he is the new owner of the business. "
Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized "Maintain food contact surfaces clean and sanitized to prevent contamination, and observed mold residuals in the soda nozzles and interior chute of ice maker machine. Also, use food grade bags and containers for storage of foods to prevent contamination, and observed tortillas stored in a take out bag with ink lettering. The ice maker machine and soda nozzles were cleaned on site, and the tortillas were transferred into a food pan, and the violations were corrected on site."
