Provide a thermometer for all refrigeration units holding potentially hazardous foods in order to properly assess the temperatures of these foods. Management stated a thermometer would be purchased for the cooler.
Approved Source Observed raw oysters stored in the walk in cooler without any tags or labels identifying the source of the oysters. Management stated the oysters had been purchased from the grocery store. Ensure all molluscan shellfish are purchased from an approved source and the packaging tags are kept for at least 90 days after the containers are empty. Management stated they would only purchase oysters from approved sources from now on.
