Observed sliced tomatoes and cheese stored at room temperature without time stickers on prep line. PIC stated food items were stored at room temperature at 10:30 am (for no more than 4 hours). Time stickers were provided.

Food Establishment Permit Anyone desiring to operate a food service establishment must obtain a current HCPHES permit. Food establishment had a change of ownership and did not notify HCPHES. Permit application was issued and permit was immediately purchased.
