Ensure all raw animal proteins are properly stored in order to prevent cross-contamination between raw and ready-to-eat foods.
Handwashing Facilities Adequate and Accessible Observed running water from the kitchen hand sink with a measured temperature of 85 degrees. Ensure all hand sinks provide running water in excess of 100 degrees Fahrenheit in order to maintain proper hand washing procedures. Management informed me that the sink would be repaired today.
Manual/Mechanical Warewashing and Sanitizing Observed soiled towels stored in a container with bleach measured at a concentration of less than 50 parts per million. Chemical sanitizer should be used in the proper concentration in order to properly sanitize all wares. Instructed management to add bleach to the bucket in order to achieve an adequate concentration for sanitization.
