Cold Hold (41 F/45F) "Store all potentially hazardous food at 41F or lower to prevent foodborne illness. Observed a prep cooler not holding food at proper temperatures even after closing the unit. The following internal temperatures were observed: sausage 52F; ham 55F, raw chicken 48F and bacon 50.5F. -COS; Foods were discarded (approx. 7 lbs.) and the unit was red tagged."
