Observed meats, poultry, and seafood items on the buffet cooler at an internal temperature >41*F for <4 hours. The foods on the buffet cooler were all removed and transferred into the walk in cooler for safe cold holding-violation corrected on site. "
Manual/Mechanical Warewashing and Sanitizing "Ensure that the 3 basin sink is set up correctly for effective cleaning of dish wares: 1)wash (soap/hot water @ 110*F), 2)rinse (plain water), & 3)sanitize @ 50-200PPM. Observed the ware wash sink incorrectly set up with bleach in the middle basin sink. The middle basin sink was drained and refilled with water, and bleach was added into the 3rd basin sink-violation corrected on site. "

Observed no food probe thermometer available in the restaurant to check internal food temperatures. A food probe will be purchased later today."
Food Establishment Permit Obtain a health permit issued from Harris County Public Health & Environmental Services (HCPHES) in order to operate the food establishment business. Observed the restaurant operating without a health permit issued from HCPHES under the new business owner's name. The restaurant was advised to cease operations and remain closed until a health permit is obtained by HCPHES. Observed that the restaurant closed and violation corrected.
