Approved Systems (HACCP Plans/Time as Public Health Control) Observed cooked chicken stored in a walk in cooler without a date on it that was said to have been prepared yesterday. Ensure that all foods that were prepared over 24 hours ago have a date associated with them to ensure that they are not consumed after the 7 days (date of preperation being day 1) allowed.
Manual/Mechanical Warewashing and Sanitizing "When using temperature to wash dishes, ensure that the wash reaches 160*F and the rinse cycle reaches at least 180*F to ensure proper washing. Observed temp machine not meeting those standards."
Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized/Good Repair Ensure that all dishes stored as clean are in fact clean and in good repair. Observed dirty dishes stored on the clean dish rack.
