Observation: Eggs in stainless steel container for omelets 57F - place into ice instead of just over it to keep the food at 41F or below. Foods were placed deeper into ice.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: When you prepare food and place it in the freezer to not put a prep and pull date 1 month apart. In the freezer your dates stop but you have 7 days total out of the freezer in which to use the product. Foods were redated with just the prep dates on it.

Observation: Even in the freezer do not store raw chicken on the same tray as raw beef to prevent against possible cross contamination. Corrected
