Observation: Raw pizzas held at room temperature. Corrected by changing the kitchen procedure and holding the raw pizzas in cold hold at 41 degrees or below.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation: Foods (sandwiches) held below the required temp at 111 to 125 degrees. Food was voluntarily discarded.
- Storage and maintenance of wet and dry wiping cloths
Observation: Common towels in-use not stored in sanitizer solution.

Hang mops to dry - observed sitting in mop sink.

Clean HVAC covers in kitchen.

Provide thin-probe, tip-sensitive food thermometer for checking thin foods.

Observed wet wiping cloths not in sanitizer. Clean shelves, cabinets, etc... in kitchen - observed with debris. Gap between work tables in kitchen observed with build-up. --clean inside cappuchino machine - may have a leak inside. Clean oven mitts/potholders - observed soiled.
