    Observation: Build up on ice chute. Meat slicer had food debris, was broken down and cleaned during inspection.

    Observation: Chili cooking in large bucket, lid covered. Lid was vented during inspection.

    Observation: Door for walk-in cooler was bent and not easily cleanable. New door is on order.

    Observation: Build up in floor drains and mop sink.

    Observation: Chemical in working container not labeled.

    Observation: Raw eggs stared above sauces and vegetables in walk-in cooler. Moved below ready to eat food during inspection.

    Observation: No thermometer provided for several reach-in coolers.

    Observation:No Employee hand washing signage provided.

    Observation: Racks in dry storage area less than 6 inches off the ground, food build up under storage.

    Observation: Roast temp 120*F in hot hold unit. Was reheated and unit moved up to correct hot hold temp.

    Observation: Uncovered employee drink in food prep area. Discarded during inspection.

    Observation: Cutting boards deeply scored.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: Cole slaw in Pepsi reach-in cooler temp 51*F, Cream dessert 52*F, all hazardous food were discarded. Service was called during inspection.
  • Heating, ventilating, and air conditioning systems design, installation, and cleaning
    Observation: heavy grease build up on vents.
  • Frozen PHF/TCS foods are properly slacked and thawed
    Observation: Several meats thawing at room temp, was placed over running water.
