- Sanitization of food contact surfaces - before use and after cleaning
Quat sanitizer was tested too low (100ppm). Quat sanitizer must be maintained between 200-400ppm for adequate sanitation.
- Material characteristics of non-food contact surfaces
Observed towel used to absorb moisture under drinking water faucet. Must not use towels to absorb moisture because it is not a smooth, easily cleanable, and nonabsorbent surface.
- Food employees hair is effectively restrained
Both workers were observed without hair restraint. When preparing food a hair restraint must be worn. Hair net, visor, bandanna, hat, etc. are all effective means.
- Heating, ventilating, and air conditioning systems design, installation, and cleaning
Bathrooms (mens and womens) and pivot fan in service area all have dust buildup. Must keep clean to prevent buildup of bacteria and contamination.
