Cleanability of floors, walls, and ceilings Observation: Caulking the wall behind the following sinks to provide smooth and easy cleanable surafce: 1. three compartment sink 2. handwashing sink.
Plumbing system repaired according to law Observation: Water heater was not working. Called for service. Plumbing must be maintained in good condition. Fix.
Separation from food, equipment, utensils, linens, and single service Observation: Several chemical sprayer bottles were stored above sanitizing tank. Chemical items must be stored below food or cleaned food contact surface. Remove.
Certified Food Protection Manager with management and supervisory responsibility employed by the establishment Observation: Manager has no certificate for Food Protection Manager. Must have at least one employee who has supervisory and management responsibility and the authority to direct and control food preparation and service must be certified Food protection manager when working with food. Register for the class and obtain certificate.
Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with law, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food, as specified under 2-201.11(A) Observation: Didn't have food employee illness reporting agreement. For each food employee must fill out food employee illness reporting agreement.
Food storage - preventing contamination from the premises Observation: The food prep table has the lowest shelf less than 6" off the floor. Adjust lower shelf to be at least 6" off the floor.

Food temperature measuring devices are provided and readily accessible Observation: THE MOBILE UNIT DID NOT HAVE A TEMPERATURE MEASURING DEVICE. SHALL PROVIDE A THERMOMETER TO ASSURE THE FOOD IS MAINTAINED FOR HOT HOLD AT LEAST 135 DEGREES. SHALL SEND LETTER OF CORRECTION BY 04-18-2014 THAT THE MOBILE UNIT HAS A THERMOMETER
Posting inspection reports Observation: The last inspection report was NOT posted. SHALL post the current inspection at eye level so the inspection can be viewed by consumers. Verify with letter of correction the owner has posted this inspection.
Capacity, availability, and pressure of hot and cold water Observation: The hot water for the handwashing sink is adequate for hand washing, BUT the stream is slower than the cold water available. The temperature is at least 100 degrees. Assure the water temperature for the hot water at the handwashing sink continues to be adequate to wash hands properly.
PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control Observation: This mobile unit has a "oven roaster" but after being turned on the temperature ONLY REACHED 92.5 degrees. The unit has the words tapped to the lid "low temp" Remove this oven roaster due to NOT holding potentially hazard food at least 135 degrees. The owner is aware the oven roaster CANNOT be used in the mobile unit and verbalized understanding. Owner also reports ALL food is placed on gas grill. This mobile unit has a hot well which was in working order during this inspection. Verify the roaster oven which was NOT at least 135 degrees WAS removed from this mobile and NOT to be USED.
